    Ingredients:

    2 large eggs
    One and half cups sugar
    2 tsp baking soda
    Half tsp salt
    1 Can crushed pineapple (14oz)
    2 Cups all Purpose flour

    Icing:

    ¾ cup sugar
    ½ cup milk
    ½ cup butter (1 stick)
    1 tsp Brandy or Vanilla Extract

    Method:

    Preheat oven to 350F or (180c)
    Cake: Beat the eggs lightly Stir in the sugar, baking soda, salt and pineapple (including juice) Add the flour Pour into greased 9 x 13 (4L) baking pan Back for 45 minutes
    Icing: Prepare while the cake is baking (best done in the last 10-15 minutes) Boil together the sugar, milk and butter Remove from the heat and stir in the brandy/vanilla Spread the icing over the hot cake (First poke holes all over the cake with a cake test so that the icing soaks in more evenly) making sure that you use all of the icing. Serve warm with whipped cream or vanilla ice cream
