This single layer cake with vanilla flavour has a delicate texture and delectable crumb gives it a crunchy butter flavor.
250 grams butter
1.5 cups (normal English teacup) milk
6 eggs (large)
2 tablespoons vanilla essence
6 flat teaspoons of baking powder
500 grams sugar (Use granulated sugar and powder in dry grinder)
470 grams maida (plain ? not self raising)
Sift the maida and baking powder twice and keep aside in a large platter.
Melt butter over heat with milk (cool the mixture to room temp)
In a large bowl beat eggs with electric mixer till creamy (keep eggs at room temperature)
Gradually add powdered sugar
Add butter mixture and maida in small quantities
Line a deep 23 cm deep square tin with wax paper at bottom and sides.
Gently pour the cake mixture into the prepared pan.
Bake for 90- 120 minutes
Gas mark 3.5 (Put the oven on when you start beating the ingredients-so that the oven is hot and ready for the cake when you have finished)
Do not open the oven door in between or the cake will sink. Insert knife in center of cake ? after 90 minutes, and if it comes out clean..your cake is done. If not keep for more time till the cake is done.
