As a child, vegetables was always something my mom had tough time convincing me to eat… My first choice was chocolates, then chips and then main course!

Eventually you grow out of these things & there came a time when I had to cook for myself… That’s when I gave a try to come up with different vegetarian lunch & dinner options ….

I appreciated the health factor and benefits they had to offer & the variety in taste was just amazing… I felt sorry for all those years I missed out on vegetarian food…

Today I am vegetarian most of the days with an exception of weekend 🙂 This is a vegan dish & is extremely tasty when eaten with rice…
