Carving Eggplant Penguin is relatively easy just like the Eggplant Owl that I had shown in the past! Tools one needs are small sharp knife and a paring knife. I have used small pieces of carrot and cloves for eyes and skin of eggplant for bow tie! Bottom cut part of the eggplant has been used for feet. Try carving this and enjoy!!

Cut the vegetable into circular pieces, place it in a bowl. Add, little red chilli powder, salt and asafoetida to taste. Set it aside for 30 minutes. Toss couple of times so the ingredients mix well. Heat the oil in a deep saucepan, roll each piece of eggplant in rice flour and deep fry few at a time until browned. Take them out with slotted spoon and place them on paper towel to remove extra oil.
Voila! You have tasty eggplant along with tea or with dinner. Instead of deep frying one could pan fry as well but I prefer deep frying!
