Pear and White Chocolate Charlotte

Mangalorean.com is celebrating its birthday today?..and I wanted to make something special to post on its big day. I knew it had to be something sweet…but whatttttttt ???!!!  Cupcakes,  trifles, cheesecakes, doughnuts?made it to the list but were crossed out.  Finally,  a Pear and White Chocolate Charlotte it was; coz I wanted it to be something different,  easy to make,  and of course,  something special.

2 packs of ladyfingers cookies
1 Tin of pear halves
2 cups heavy cream
3 (1/4 ounce) envelopes unflavoured gelatin
1/3 cup cold water
6 egg yolks
2/3 cup sugar
2 cups milk
? cup white chocolate
? cup orange juice


Pour the orange juice in a shallow dish and dip the ladyfinger-cookies and quickly set them around the inside of a spring-form pan lined with plastic wrap.  Layer about 12 in a flower like pattern at the bottom of the pan.  Set aside.


Sprinkle gelatin over the 1/3 cup water and set aside.  Whip the cream to soft peaks and refrigerate until ready to use.

Pour the milk into a medium saucepan and bring to boil.  In a separate bowl,  whisk the eggs and sugar together until thickened and a pale yellow colour.  Slowly but steadily add the hot milk, stirring constantly to temper the yolks.  Pour the mixture back into the saucepan and cook over low heat, stirring constantly until the mixture is thickened (much like custard)  Remove from heat and add the white chocolate, let it sit for a minute and then whisk till incorporated.


Heat the gelatin 10 seconds in the microwave, add it to the white chocolate batter whisking constantly.  Let the mixture cool to room temperature.

Add the whipped cream and gently fold into the white chocolate cream.


Carefully pour into the spring-form pan, which is lined with the ladyfinger cookies.  Keep in the refrigerator to set, preferably overnight.


Remove gently from the springform pan and arrange it on the platter on which you plan to serve it.  Cut pear halves into thin slices and fan them out on top of the charlotte.  Wrap a decorative ribbon around the ladyfinger biscuits.


Taaaaahhhhh Dah !!!!!!!   The Pear and White Chocolate Charlotte is ready !!!!!!!
